Anyways...

I don't like the country idea. You will just get everyone claiming they are from the country that's in first. And like others have said, some people may live in countries where very few people play on this site.
I personally like Eric 's idea about teams, where there is a team leader and you can invite people to your team. Of course there should be a player limit and only players with a certain amount of points/coins can create a team, and other rules like that.

Then teams can compete in races, like tag-team races at every checkpoint or something funky like that. (Won't happen any time soon as this sounds very complicated to implement into the game).

Combined points of all the players on the team, or some other point system based upon high scores and such can be used as the teams total score. A global leader board can be created for the teams as well.

Just throwing out ideas left and right here. I have a feeling this will be a nightmare for the admins if they do attempt to include this in the game.
